Raw Food Recipe: Collard Greens Burrito/Raw Sushi

Ingredients needed for this recipe are as follows:

1-2 bunches of Collard greens depends how many your making
1 red pepper
1 orange or yellow pepper
1-2 batches of Avocado Mash depends on how many your making
1 bunch of cilantro
2 cucumbers
6 tomatos
6 carrots
2 tubs of sprouts I love alfalfa and sunflower
3-4 large handfuls of spinach
1-2 Tblspns Chia Seeds "Optional" added to avocado mash for some crunch and thickening.

Food Prep:
Place the collard leaves in some lightly salted water to clean them
Deseed and julianne the peppers short thin slices
Quarter the tomatos and then deseed with a knife only keeping the skin and flesh and then also julianne thin slices
Rough chop the cilantro add to the avocado mash for some extra flavour
Peel carrots and cut in half, and then julianne, a mandolin works well for this if you lack the knife skills.
Cut the cucumber in half and deseed then also slice these into this strips.

Making a wrap starting with the base of the 2-3Tblspns avocado mash this will depend on size of leaf then start layering the ingredients for instance some red pepper, cucumber,yellow pepper, tomato, spinach use whole leafs, carrot, this will give you a swirl of color after you roll it.   You could also add some raw salsa.

Raw Sushi:
For Sushi add 2 tablespoons of Noma Shoyu "Raw Soya Sauce" and a touch of chili sauce also known as serachi to the avocado mash for an asian flare instead of collard greens of course use some raw Nori sheets. 

If you decide to make both make one batch of avocado mash for reg., and another for sushi rolls.
P.S. remember to save the collard stems great for juicing,
these would make a great transitional meal.  Collards work great for these because they stand up better then your average lettuce leaves.
