Recipe: Nectarine Peanut Butter Salad

Ingredients for Dressing needed:

Organic Peanut Butter not the raw kind for myself it is too expensive
Bottle of Sweet Chili Sauce for Chicken usually find in chinese section of grocery store.
Cayenne Pepper
Sea Salt
Crushed black pepper
water
Nectarines


For Dressing:

2 Tblspns of peanut butter
2 Tblspns of sweet chili sauce
pinch of cayenne
1tsp of sea salt
1tsp of black pepper
1/2 cup water
1 Nectarine pit removed
Place all ingredients into a blender and blend until smooth add more water if too thick until you get the consistency you want.

Salad Ingredients I chose and also recommend:

I chose Bok Choy for the base since the dressing is like a thai peanut sauce
cucumber, tomatoes, celery, spinach for some added greens, wedges of nectarines to compliment the dressing, and you could add some bell pepper if you like I however did not have any on hand.

I will not say the amounts of the salad ingredients because it all depends on how many people you will be feeding be it yourself or your whole family.  I had this for dinner this evening and I would have to say it was awesome the little kick that Bok Choy naturally has and the zing of the dressing and pairing of the sweet nectarines and the heat of the chili sauce with the touch of asian flavour MMMMM.  The dressing above will make plenty and you can always double or even triple the recipe.

One last thing this is a high protein salad and also has some fat content with the peanut butter if your watching your fat intake maybe omit the peanut butter and make a spicy nectarine dressing instead.
