Delicious Peach & Berry Salad with Swiss Chard

While at work and over my short juice cleanse I was craving a great salad just happened that we got some fresh red chard in my work food box I do community living anyways since I had also brought some of own produce I whipped something up which turned out amazing.
The items you will need are as follows:
This amount for one person
1 bunch of Swiss Chard- washed use all of it including the stems
2 nectarines or peaches your choice maybe even one of each
2 stalks of celery thin slice
1/2 beet cut into a fine julienne-thin strips
2 sprigs of fresh time take herb off stems give a rough chop
1/2 cucumber large dice
1 large tomato or 3 Roma large dice
1 cup fresh blueberries because they are so yummy
1tsp sea salt
2tsp fresh cracked black pepper
1 good drizzling of extra virgin olive oil roughly 1tblsp
Toss these ingredients in a bowl and allow to sit for 5min for the chard to absorb some of the oil and salt to breakdown some of the toughness.  Then give one last toss and bon apetite.

All I can say was I amazed at awesome this tasted the olive oil really brightened up everything and the fresh thyme was the perfect herb choice for all the different fruits I used they just popped.

I would recommend other oils like flax, avocado for this or even a bit of coconut oil but the strong olive flavour is a nice contrast next to the sweet fruit.
